Vintage Iron and 52100

262x55mm gyuto in 52100 core with nickel and vintage iron cladding

Convex grind with thin edge and sharp distal taper for ultimate performance. Polished spine and choil with satin, hand polished bevels with some forge finish and etched to highlight the steel pattern. 

The handle is Ebony with heirloom aged brass bolster.
