192mm veg cleaver in Hitachi stainless san mai with a Blue Super steel core.
This blade has a thin and darkly etched core with plenty of distal taper and thin edge with a walkschliff style thinner spine. The spine and choil are mirror polished and etched to highlight the core steel sharpened to 4k.
There is a little etching haze on one bevel as visible in the photos, this is purely aesthetic and adds character to the blade.
The handle is a stunning piece of stabilised maple burl with a brass heirloom-fit bolster.
