Apex Ultra Gyuto

220x55mm gyuto in Apex Ultra with blacked out 80crv2 cladding and forge finish. 

Convex grind with thin edge and sharp distal taper. Polished spine and choil with satin, hand polished bevels and acid etched to highlight the steel layup. 

The handle is a beautiful dark and dense ebony with heirloom fit brass bolster.
