52100 Iron Multi-Clad Gyuto

223x55mm gyuto in 52100 core with nickel and vintage iron multilayer cladding

Convex grind with thin edge and sharp distal taper for ultimate performance. Polished spine and choil with satin, hand polished bevels with some forge finish above. Etched to highlight the steel pattern. 

The handle is stabilised Amboyna Burl with heirloom fit brass bolster.
