52100 and Vintage Iron

230x56mm gyuto in 52100 core with nickel and vintage iron cladding

Convex grind with thin edge and sharp distal taper for ultimate performance. Polished spine and choil with satin, hand polished bevels and etched to highlight the steel pattern.  

The handle is Arizona Ironwood with heirloom fit brass bolster.
