250mm Gyuto in 52100 Carbon Steel with Saya
This unique gyuto has a thin edged workhorse grind and 250mm cutting edge. The blade is handmade from 52100 carbon steel, used to make ball bearings and has a legendary reputation for use in high performance knives.
This blade has been heat treated to a final tested hardness of 63.5hrc. It has been convex ground with near continuous distal taper to create an extremely fine and sharp cutting edge. The primary bevels have been finished with an 800g satin hand rubbed finish with polished spine and choil for comfort. The edge has been sharped to 4k on whetstones.
The handle is a western style hidden tang with a brass bolster, brass and black G10 spacers and stabilised York Gum Burl. The handle has been rounded with facets and sits comfortably in the palm of the hand. The knife balances near the makers mark (as pictured) and weighs a total of 203g, ensuring lightweight high performance.
