Spicy White Honyaki with Spalted Redgum and Maple
Nimble gyuto in Spicy White (26c3) a high carbon steel capable of high hardness and an ability to hold an extremely keen edge. This blade has also been differentially hardened with a tested edge hardness of 64.5hrc. The hamon is subtle and wispy up the centre of the blade bevels.
This blade has been convex ground with near continuous distal taper to create an extremely fine and sharp tip and cutting edge. The primary bevels have been highly polished to show off the hamon and the spine and choil rounded and polished for comfort. The edge has been sharpened to 4k on whetstones.
The handle is a western style hidden tang with a brass bolster, black g10 and brass spacers and stunning spalted Redgum. The handle combines facets and rounded belly to sit comfortably in the palm of the hand with the knife balancing at the makers mark ensuring lightweight high performance. The knife also has a leather lined saya made from highly figured maple with a tapered brass retention pin.
This is a high hardness, keen edged high performance knife and as such care must be taken to protect the edge (i.e. please do not cut frozen foods).
