240mm gyuto in Spicy White (26c3), a high carbon steel capable of high hardness and keen edge retention. This blade has also been differentially hardened with a tested edge hardness of 65hrc.
The hamon has nice activity across the blade as seen in the photos and has some some mottled highlights along the spine.
This blade has a convex ground for food release with aggressive distal taper from 3.25mm to an extremely fine tip. The spine and choil have been rounded and mirror polished and the edge sharpened to 4k on whetstones.
The handle features some stunning stabilized old growth Myrtle burl with a brass bolster.
