195mm Gyuto in Spicy White
This unique gyuto/slicer has a thin edged convex grind and 195mm cutting edge. The blade is handmade from 26C3 also known as Spicy White, which is a very high carbon steel originally developed for scalpels and razorblades, it has a very fine grain structure and the highest potential for sharpness.
This blade has been heat treated to a final tested hardness of 64.5hrc. It has been convex ground with near continuous distal taper to create an extremely fine and sharp cutting edge. The primary bevels have been finished with an 1500g satin hand rubbed and 3000g polish to bring out the hamon and polished spine and choil for comfort. The edge has been sharped to 4k on whetstones.
The handle is a western style hidden tang with a brass bolster, brass and black G10 spacers and Ringed Gidgee. The handle has been rounded with facets and sits comfortably in the palm of the hand. The knife balances near the bolster (as pictured) and weighs a total of 173g, ensuring lightweight high performance.
This knife also comes with a black veg tan leather sheath.
