240mm 52100 Gyuto

All Thrills and No Frills 52100 Gyuto. This blade is high carbon and reactive.

Convex ground with thin edge and sharp distal taper for ultimate performance. Polished spine and choil with machine polished bevels. Sharpened to 4k on stones. 

The handle is dyed and stabilised blue maple burl.
