This is a high performance kitchen knife and has a 225mm cutting edge. This gyuto is handmade from RWL34, a premium powder metallurgy stainless steel developed by Damasteel for its high strength and toughness combined with it ability to hold an extremely keen edge.
This blade has been heat treated with a cryogenic cycle to a final hardness of 64hrc. It has been convex ground with near continuous distal taper to create an extremely fine and sharp cutting edge with good food release and stiff spine. The primary bevels have been finished with an 800g satin hand rubbed finish with polished spine and choil for comfort. the edge has been sharped to 4k.
The handle is a western style hidden tang with brass bolster, brass and black G10 spacers and brass pin with stunning stabilized Redwood Lace Burl. The handle shape has been rounded and sits comfortably in the palm of the hand whilst also ensuring adequate knuckle clearance. The knife balances exactly in-line with the makers mark on the blade and weighs a total of 184g, ensuring lightweight high performance.
This knife has a loose fit saya made from two-tone stabilized fiddleback Tasmanian Blackwood with Black G10 and brass highlights through the spine to match the knife handle. The pin is tapered to ensure a continuously snug fit and is made from black Juma and brass.
