High performance 235mm gyuto handmade from RWL-34 premium Damasteel , renowned for its attainable hardness, fine grain and edge holding ability. This blade is hardened to 64HRC with cryogenic treatment. It is convex ground with a very thin cutting edge. This blade is designed to be slightly 'heftier' with a thicker grind for heavier cutting tasks however still tapers to a thin edge so cutting performance is maintained. The primary bevels are hand-finished to 800g with 2000g rounded spine and choil for comfort. The edge has been sharpened to 4k wet stone.
The handle is a western style hidden tang with a stabilized Tasmanian Myrtle burl bolster, brass and G10 spacers and stabilized Tasmanian Blackwood. The knife is designed to be forward balanced as seen in the photo with a total weight of 156g, ensuring lightweight high performance.
