Yu-Shoku S-Grind Gyuto
200mm s grind gyuto made from Takefu yu-shoku Vtoku2 core carbon steel.
This blade has a thin and darkly etched core with a layers of copper, brass and stainless steel mokume cladding. The spine and choil are mirror polished and etched to highlight the core steel and edge sharpened to 8k.
The handle is a stunning piece of stabilised red Amboyna burl with heirloom fit brass bolster.
