240mm S-Grind Gyuto in Magna-Cut
240mm Gyuto in CPM Magna-cut. This is a new stainless steel that has excellent toughness, hardness and edge retention with exceptional corrosion resistance. This blade is heat treated to 64hrc. This blade has agressive distal taper and an s-grind for added food release and cutting performance.
The spine and choil are mirror polished and the edge sharpened to 4k.
The handle and saya are stabilized Tasmanian Blackwood with a heirloom fit brass bolster and tapered saya pin.
