Sculpted S-Grind Honyaki
240mm honyaki Gyuto in 26c3 Spicy White. This blade has some wicked taper with aggressive distal tape and a very thin edge with the addition of a deep s-grind. This one sings while it cuts with a flatter belly profile but is definitely one to keep away from frozen food/bones etc (as you should with any thin edged handmade knife).
The spine and choil are mirror polished and the edge sharpened to 4k. Bevels polished to bring out the Hamon.
The handle and saya are sculpted Ringed Gidgee with an heirloom fit brass bolster and tapered saya pin.
